Mom & Me’s Nut Milk Recipe
You will need:
1 nut milk bag *
1 cup raw nuts/seeds of choice (almonds or brazil nuts are nice)
3-4 cups filtered water
1 t vanilla
4 dates (or ½ to 1 apple for lower glycemic)
Cinnamon to taste
1.) Soak the nuts/seeds for 8 hours or overnight; Drain and rinse well.
2.) Add 1 cup nuts to blender with filtered water (more water makes thinner milk, less creates a thicker consistency)
3.) Blend for 1 to 2 minutes until nuts are completely broken down. (do not let the mixture heat up)
4.) Pour into a bowl lined with a nut milk bag.
5.) Squeeze the liquid into the bowl—save the pulp in the bag for other recipes (freeze or dehydrate immediately)
6.) Add the “milk” back to the blender along with the vanilla, dates, and cinnamon.
7.) Blend slightly.
8.) Enjoy as is, or over one of our delicious cereals!
*Note: Pecans, hemp seeds, cashews and macadamias do not necessitate straining with a nut milk bag. You can simply add all of the ingredients to the blender, combine, and serve.
Chia Seed Pudding or Porridge
1 recipe Mom & Me’s Nut Milk
3/4 cup to 1 cup Chia Seeds
Dried Fruit, Fresh Fruit, Sweeteners as desired***
The proportion for Chia Seeds to liquid is, in general, 1/4 cup chia to 1 cup liquid. This will vary depending on how thick you like your pudding/porridge, and will call for some trial and error.
Mix chia seeds and milk. Allow to sit for approximately 10 minutes, stirring every couple of minutes. The mixture will turn into a tapioca-like consistency. Stir in fruit, flavorings as desired and serve with a generous sprinkling of cinnamon! YUM!!! What a great way to start the day…
***some of our favorite stir in’s include dried currants, goji berries, mulberries, banana slices, apple chunks, strawberries, blueberries (whatever is in season). The possibilities are endless! And why stop at breakfast? My kids love this for dessert too, or any meal/snack, for that matter!
